Chocolate and Coconut Nests




It seems that Easter gets earlier and earlier every year. So much so that literally days after Christmas my local super market was stacking its shelves with chocolate eggs! Bonkers! This recipe is a little bit of fun you can have with very few ingredients, very little skill and most importantly it gets the kids in the kitchen. Just make sure that a responsible adult does any hotwork, as while chocolate is yummy, burns, not so much. 

These Chocolate and coconut nests make great gifts for visiting grannies and grandpas, they look great and taste yummy! It also give your little people a huge sense of achievement, when they inform said grandparents that 'I made that!' 

The basic recipe makes 4 decent sized nests, of course you can double it, triple it as many times as you like.  Prep time is 10 mins and refrigeration time 3 hours. 

So here is what you need. 

100g (4oz) Plain chocolate, broken into pieces
25g (1oz) butter or margarine, cut into cubes
15g (1/2oz) Shredded coconut 
2 Shredded Wheat, crumbled
1/2 table spoon Golden syrup

1 bag of candy/sugar/chocolate mini eggs to decorate.


1. Grease and line a small baking sheet. 

2 Put Chocolate, butter and syrup into a saucepan and heat gently over a very low heat and stir until melted. Making sure its mixed thoroughly. (This is a job for mum) 

3. Remove from the heat and stir in the shredded wheat and some (not all) of the coconut. 

4. Divide the mixture into four and spoon onto the baking sheet. Shape into nests. (They'll look like straw doughnuts)

5. Sprinkle with the rest of the coconut and leave to set in the refrigerator for approx. 3 hours. 

6. When the chocolate is set fill with eggs. 



Notes: You can melt the chocolate filling in the microwave. Mix the chocolate, butter and syrup together, then place in the microwave and melt on a medium heat for about 2 mins. Make sure to keep and eye while it's melting and to stir about halfway through the cooking time. The time is approximate as not all microwaves are the same.
