Cooking during Corona

Been a while since I've updated, I got a little lazy with the blogging but kept on cooking. Now seemed like a prime time to get back into that.

With the onset of Corona virus locking everything down, I've seen lots of people on tv, or youtube or talking in the huge lines at the store worrying about getting enough to eat, or wondering what on earth they are going to cook, let alone how to keep their little monkey's occupied while on lockdown. So I'm going to try to come up with something yummy to eat from your store cupboard, and cakes and cookies you can easily make with your kids. I can hear the screams from some of the harassed mums wondering if I'm really suggesting letting your little monkeys loose in the kitchen. I am! I spent most of my formative years as a young child getting underfoot in the kitchen, but my mum saw at as an opportunity to get me interested in cooking.  Thus by the time I was 5 years old, I'd mixed and baked my first victoria sponge with little interference from mum (except putting it in and removing it from the hot oven,)

Easter is just a week away, so get the kiddo's into the spirit with nest cakes. I did this recipe way back when I first started this blog, the shredded wheat can be swapped with your favourite cereal (or whatever is available at the store), so cornflakes, rice crispies etc are perfectly fine as a swap. http://simplyscrummyyummy.blogspot.com/2015/04/easter-something-fun-for-kids.html


Use up leftovers! This is something I grew up doing, have a roast dinner on sunday, then use the leftover meat and veg the next day to create a meal.

For example... This Sunday we had Roast beef, carrots, broccoli, cauliflower and sugar snap peas, potatoes are a lost cause as my brother is a potato fiend.  With a few little tweaks to these ingredients, you can have all sorts of meals, that are both filling and taste awesome.

Today we had beef hotpot. 

Here's how it came together...

Leftover Roast beef. Cubed.
Leftover vegetables (Carrots, cauliflower, broccoli etc.)
150ml Beef stock
1 1/2 tsp Smoked Paprika
1tbsp Flour
1 tsp coriander
3 large potatoes - Sliced.
Salt and Pepper.

Heat the oven to 160/170 degrees C.
I tend to slow cook in a casserole dish or cast iron pan. Heat 1 tsp oil in pan and add Beef and Paprika and flour and stir, add the veg and stir in the stock. allow to simmer for a few minutes and it'll thicken a little with the flour. (don't panic if it doesn't, the juices will be soaked up)
Layer the potatoes over the top of the meat and veg mixture and push down so that the stock can soak into them. Sprinkle with Salt, pepper and corriander.
Cover with foil and place in the oven for about 1 1/2 hours.
Remove the foil for the last 30 mins to crisp up the potatoes a little.
Serve and enjoy!
