The best thing about summer is the variety of soft fruits. There are so many things you can do with them too! Summer to me is tennis specifically Wimbledon and when you think of that you think strawberries and cream. But, what about cherries, raspberries early blackberries and black and red currents?!
Fruit flan covers all of those and more. During the summer I like to do a sponge base rather than pastry, line it with a nice jam then arrange the fruit on top.
You will need:
1 9inch flan tin greased and lined
4oz margarine
4oz caster sugar
4oz self raising flour
2 large eggs
Strawberries, raspberries, cherries and any other soft fruit of choice washed hulled, sliced in half (strawberries)
Strawberry jam
Make the flan base: cream margarine and sugar until soft and fluffy.
Add eggs and beat well.
Add a teaspoon of vanilla stir well.
Mix in flour to form batter.
Pour into flan tin and bake 25 minutes at 180c until sponge springs back.
Allow to cool.
Prepare soft fruit and sprinkle with sugar.
Spread a thick layer of jam over flan base and arrange fruit in top.
Serve with cream or icecream.
