I love ice-cream, all kinds I'm really not picky. So imagine the absolute joy I experienced when grocery shopping on Friday and I found they were selling waffle cone makers. So armed with my new gadget and a large tub of Neapolitan ice cream I took an hour out of watching the pre- tour de France time trails to make something yummy.
Recipe:
2/3 cup plain flour
1/4 tsp salt
2 eggs
1/2 cup sugar
4 tbsp melted butter (can use margarine)
1/4 cup milk
Preheat the waffle cone maker according to the manufacturers instructions. Coat the iron plates with a little oil (i use a brush or a piece of kitchen paper and wipe it over the plate once)
Sift the flour and salt together and set aside.
Whisk the eggs and sugar together till light and fluffy.
Add the flour and stir until incorporated. Add the butter and milk and stir until combined. The batter will have a nice thick consistency and a slight sheen to it. (I add a little ginger to mine, there's' no rule that says you can, you could also add vanilla or any other spice)
allow to sit while the waffle maker heats.
When it's reached the desired temperature, add two (2) tabled spoons of batter to the centre of the waffle maker, close the lid and allow to cook approx 3 minutes (if on the low setting and no more than 5minutes) Remove with a wooden or plastic spatula and use the cone tool to immediately roll the cones as they set as they cool. You don't have to make cones you can roll cigars or any other fancy shape you can come up with. Fill with ice cream or fruit or go wild with your imagination. ENJOY!
