This is no ordinary dry, boring carrot cake, this cake is the perfect winter warmer, its, soft and unctious, with hints of warming spices that make you feel like you're wrapped in a warm comfy blanket. Best of all, its simple and unless your cooker breaks, you really can't get it wrong.
My brother always begs me to make him another, out of all the cakes that I make, this is probably the most popular.
You will need:
20cm (8 inch) tin or tray bake tin. Greased and lined.
Give yourself time to prep, there's no rush. It usually takes me about 10 - 20 mins (depending on distractions) to prep and mix.
30 mins cooking time and can be frozen for up to 8 weeks.
Ingredients:
175g (5oz) Self raising flour
1 tsp Cinnamon
1 tsp Mixed spice
1 tsp Ginger (optional)
1/2 tsp Bicarbonate of soda
100g (3 1/2 oz) Light or dark soft brown sugar. (I prefer light, so as not to overpower the taste)
150ml (5floz) Sunflower oil (you can use vegetable oil)
2 large eggs
75g (2 1/2 oz) Golden syrup
125g (4 1/2oz) carrots - grated.
Finely grated zest of 1 orange.
Extra: 100g Dried fruit (sultanas, currants, raisins)
For Icing:
75g (2 1/2oz) Icing sugar (Confectioners sugar)
100g (3 1/2oz) Full fat cream cheese
1 -2 tbsp Orange juice
finely grated zest of orange.
Method:
Preheat oven to 180 degrees C (350F/ Gas 4) Line the cake tin.
In a bowl combine flour, spices, bicarbonate of soda and sugar, mix well to combine.
In a jug mix oil, eggs and syrup then add to the dry ingredients. Stir in the carrot and orange zest. If using dried fruit add them at this point and mix well. Pour into tin and level off with a light tap.
Bake for 30 mins in the middle of the oven, or until firm to touch.
Leave in the tin to cool for a few minutes, then turn out onto a wire rack and cool completely.
For the icing. Sift the sugar into a bowl then add cream cheese, orange juice and zest. Beat with an electric whisk until spreadable. Dollop (technical term) onto the cake and spread evenly over the top. Decorate with extra orange zest and cut into squares or fingers (whatever you prefer)
Eat with a nice cuppa and enjoy!
